Year of the Dragon: Spicy Chicken Cabbage Lumpia

Did you know the Philippines is the home to the oldest Chinatown in the world? Binondo has been serving up Filipino Chinese food for centuries (est 1594).  In honor of this heritage fact and that this year is the year of the Dragon we have created an homage to Chinese restaurant egg rolls .  Ground chicken braised with vegetables and wrapped in a thicker egg roll style wrapper with Deer Creek Rattlesnake cheese.

What better way to cool down in the summer heat than Halo Halo!  We created a lumpia that has our ube halaya, and leche flan, mixed with sugar palm fruit (kaong), sprouted coconut (macapuno), fresh fruits: pineapple, mango, papaya, cherry, and creme fraiche.  Crispy lumpia outside, cooled creamy halo halo inside! naks!

Using the spice recipe from a banya dish handed down through several generations of a very good friend of mine.  Ground lamb is marinated overnight in a blend of 10 herbs and spices before being wrapped with tomato and cilantro in a thin crispy lumpia wrapper.  Aromatic, tangy, lamby!

Oktoberfest is here!  Our favorite street food in Germany is hands down currywurst!  1/4lb of our homemade fleishwurst sausage wrapped in bean curd skin and cooked in local Seattle beer and deep fried just before serving creating a crispy brown skin.  Served with our house currywurst sauce!

It's fall and that means pumpkin time!  We took the classic leche flan and made our own PSL - Pumpkin Spice Lumpia!  Pumpkin infused leche flan warmed up with fall spices for a perfect lumpia and served with an apple cider caramel dipping sauce to warm up to!

My Ninang (godmother) was the family chef who was written up in a major Chicago newspaper for her food.  This is her recipe for turkey stuffing using rice as a base, some vegetables, chicken stock, corn flakes, and we added seasoned ground turkey to create a handful of Filipino thanksgiving!
